SAXON VILLAGE CHEESES

Traditionally the fresh cows milk is sold to the dairy companies and sheeps milk is made into fresh cheese for immediate local consumption. For winter the cheese is stored in brine, fermented or frozen - none of which is suitable to safely take the cheese to market. 

ADEPT have been working to improve shelf life and produce a range of aged cheeses (Branza de Tarnava Mare) from the flower rich hay meadows of Transylvania

Goats milk cheese from Crit has been the most successful with the producer selling more last year than ever before (indeed in December 2006 he was considering goat sausages).

Buffalo milk from Mesendorf has been made into a very tasty cheddar type cheese but is not yet available for sale.

Cows milk from Saschiz and Mihai Viteazu has also been made into a very tasty cheddar type cheese but is not yet available for sale.

Trials with cheese from sheep milk commence in May 2008.
